Creamy Carrot Smoothie

A thick, silky carrot smoothie with no dairy and no juicer. Simmering the carrots with the cashews is what gets rid of the strings and the earthy taste, so there is nothing to strain. Adjust the water to make it creamier or more drinkable.

Ingredients
  

  • 250 g carrots about 3 medium, peeled (9 oz)
  • 80 g raw cashews unsalted and unroasted, a heaping 1/2 cup
  • 500 ml cold water 2 cups, or 1 liter (4 cups) for a lighter version
  • 2 tsp maple syrup or honey or sugar, to taste
  • 1 pinch salt do not skip it

Method
 

  1. Peel and chop the carrots. The pieces do not need to be thin or even. The smaller they are, the faster they soften.

  2. Simmer them with the cashews. In a saucepan, covered with water. You will drain this water later, so there is no need to measure it.

  3. Cook for about 20 minutes. Until a fork slides through the carrots with no resistance at all and the cashews are soft. This step decides the texture: undercooked carrots mean a stringy smoothie, and extra blending will not fix it.
  4. Drain and cool under the tap. Rinse with cold water until everything is completely cold. Never blend anything hot in a sealed blender, because the steam builds pressure.
  5. Add everything to the blender. With the 500 ml (2 cups) of cold water, the sweetener and the pinch of salt.

  6. Blend for at least 2 minutes on high. At the one minute mark it looks done, but it is still gritty. The longer you blend, the silkier it gets.
  7. Strain, if you like. Through a fine mesh strainer or a nut milk bag. You do not need to, since cashews leave almost no pulp, but it makes the texture even smoother.
  8. Serve over ice, or chill and shake before serving. It is much better cold, and separation in the jar is normal.

Notes

  • The carrots must be very soft. If a fork still meets resistance, the smoothie will be stringy no matter how long you blend it.
  • With 500 ml (2 cups) of water it is thick and creamy. With 1 liter (4 cups) you get a light drink, similar to a store bought plant milk. Start with 500 ml, since thinning it out is easier than thickening it.
  • Use raw, unsalted cashews. Roasted ones overpower the carrot.
  • No need to soak the cashews: the 20 minutes of simmering do that job.
  • It separates in the fridge because there are no emulsifiers. It has not gone bad, just shake it.
  • It thickens over time because the fiber keeps absorbing water. If it gets too thick, add a splash of water.
  • Made with honey, this recipe is not vegan. Use maple syrup if you need it to be.
