Homemade Greek Yogurt: Creamy, Thick, and Only 2 Ingredients
Making yogurt at home sounds like a weekend project, and it’s really ten minutes of work and one night of waiting. You don’t need a yogurt maker, an Instant Pot, special cultures, or anything you don’t already have in your kitchen: just milk and a couple of spoonfuls of yogurt.
The best part is that once you start, you don’t buy it again. Save 40 g (2 tablespoons) of your own yogurt for the next batch and the cycle keeps itself going.

Why this recipe works
Yogurt is milk fermented by two specific bacteria. Those bacteria are already in the plain yogurt you buy, so when you stir a little into warm milk you’re seeding a culture. They feed on the lactose, produce lactic acid, and that acid makes the milk proteins clump together and set.
Everything else in this recipe exists to make life easy for those bacteria: give them the temperature they like and leave them alone while they work.
That’s why you don’t need any equipment. A yogurt maker is basically a box that holds 110°F for a few hours. A covered pot wrapped in a towel does the same job.
You only need 2 ingredients
- 1 quart (1 liter) whole milk. Whole milk gives you a creamier yogurt with more body. Reduced fat works, but it comes out lighter and less firm.
- 40 g plain Greek yogurt (2 tablespoons). This is your starter. Check the label: ideally it contains only milk and cultures. If it says “live and active cultures,” even better. A packet of yogurt starter culture works too.
That’s it. No sugar, no milk powder, no thickeners.
The two temperatures that matter
This is the whole secret of the recipe, and the one part worth not improvising.
180–185°F (82–85°C): the heating temperature. Heating the milk to this point unfolds the whey proteins so they can tangle together. That tangle is what makes yogurt firm instead of watery. Skip this step and it still sets, but it comes out looser and weeps more whey.
That heating also knocks back the bacteria already present in the milk, the ones that would compete with your culture. It isn’t a safety issue (the milk you buy is already treated), it’s about clearing the field for the yogurt.
108–113°F (42–45°C): the seeding temperature. This is where yogurt bacteria work best. And there’s no wiggle room on the high side: above 122°F (50°C) you kill them and nothing sets. This is the number one reason people say their yogurt failed.
No thermometer? 180°F is “very hot, steaming, bubbles around the edge, but not boiling.” 110°F is “warm bath water”: dip in a clean finger and you feel heat without discomfort.
That said, a kitchen thermometer costs very little and turns this into a recipe that works every single time. If you plan to make it more than once, it’s worth it.
Using ultra-pasteurized milk? You can skip a step
Check your milk carton for the words ultra-pasteurized or UHT. A lot of milk sold in the US is, especially organic brands, and shelf-stable boxed milk always is.
If yours is ultra-pasteurized, the heating step to 180°F is optional. That milk was already taken to around 280°F at the plant, so its proteins are already unfolded. You only need to warm it to 108–113°F and seed it.
With regular pasteurized milk you do need the full heating step: pasteurization runs about 161°F for 15 seconds, enough to make it safe but not enough to unfold the whey proteins. Skip the heating with regular milk and your yogurt will come out thinner and weep more whey.
In practice: ultra-pasteurized is the fast lane, regular pasteurized is the creamy lane. We do both depending on the day.
How we make it at home, step by step
Homemade Greek Yogurt
Ingredients
- 1 l whole milk about 1 quart; regular or ultra-pasteurized
- 40 g plain Greek yogurt 2 tablespoons, with live cultures
Instructions
- Heat the milk to 180–185°F (82–85°C) in a pot, stirring now and then. No thermometer: very hot and steaming, but not boiling. If you're using ultra-pasteurized milk you can skip this step and go straight to the next one.
- Let the milk cool to 108–113°F (42–45°C). If a skin has formed on top, lift it off. No thermometer: like warm bath water.
- Whisk the yogurt with a little of the warm milk in a separate bowl until smooth and lump-free. Then stir it into the pot.
- Cover the pot, wrap it in a towel or blanket and let it ferment in a warm spot for 6 to 10 hours, undisturbed. An oven turned off with the light on works perfectly.
- Once it has set, refrigerate for at least 4 hours. This is where it finishes firming up.
- Set aside 40 g in a small jar to use as the starter for your next batch.
- To make it Greek style (optional): strain it in the fridge using a strainer lined with cheesecloth. 1 to 2 hours gives you a very creamy yogurt; 3 to 5 hours, considerably thicker.

- Don’t go above 113°F when you add the starter: above 122°F the bacteria die and the milk won’t set.
- The longer it ferments, the tangier it gets. If you prefer it mild, refrigerate it as soon as you see it has set.
- Don’t throw out the whey you drain off: use it in pancakes, quick breads, bread or smoothies.
- The culture weakens over generations. Around the fifth or sixth batch, start again with a store-bought plain yogurt.

How to turn it into Greek yogurt
Greek yogurt isn’t a different recipe: it’s the same yogurt with the whey drained out. The longer you strain, the thicker it gets.
Set a strainer over a bowl, line it with cheesecloth or a clean cotton towel, and pour in the chilled yogurt. Cover it and let it drain in the fridge, never at room temperature.
- 1–2 hours: very creamy, like store-bought Greek yogurt.
- 3–5 hours: considerably thicker, great for eating by the spoonful or using in recipes.
- 12 hours or more: you’re into labneh territory, almost a spreadable cheese. With a pinch of salt and a drizzle of olive oil it’s outstanding.
If you have some left over, use it in our frozen fruit ice cream: it adds creaminess and helps everything blend smoothly.
Don’t throw out the whey
That yellowish liquid left in the bowl is whey, and it’s full of protein. Nothing goes to waste here:
- In pancakes or quick breads, replacing part of the milk. It makes a very tender crumb.
- In bread, replacing part of the water.
- In smoothies, with frozen fruit.
- For cooking rice or beans, instead of water.
It keeps for a few days in the fridge, well covered.
The yogurt that never runs out
Before you start eating the batch, set aside 40 g in a small jar. That’s the starter for your next one. This way you chain batches together without buying yogurt again.
One honest caveat: the culture weakens over generations. Around the fifth or sixth batch you’ll notice it sets less well or comes out looser. When that happens, buy a fresh plain yogurt and start over. That’s not a mistake on your end, it’s just how it works.
Variations and tips
- Even creamier. Add 2 tablespoons of powdered milk to the quart of milk before heating. It adds milk solids without adding liquid and the body improves a lot.
- With vanilla. A teaspoon of homemade vanilla extract per jar, stirred in at the end, after it has set.
- Sweetened. Better to sweeten when you eat it than before fermenting: sugar during fermentation changes how the culture behaves.
- With fruit. Always add it after the fridge. Add it before and the water from the fruit will loosen the yogurt.
- A warm spot without an oven. An oven turned off with the light on is the best option, but the microwave turned off with a jar of very hot water next to it works too, or simply the pot wrapped in a blanket on top of the fridge.
Frequently asked questions about homemade yogurt
Why didn’t my yogurt set?
It’s almost always one of three things. The milk was too hot when you seeded it and the heat killed the bacteria (above 122°F there’s nothing to be done). The starter yogurt had no live cultures, which happens with heavily processed or sweetened yogurts. Or it got cold during fermentation: if the spot doesn’t hold the heat, the process stalls.
Can I make this in an Instant Pot?
You can, and the process is the same, just with the appliance holding the temperature for you. Use the Boil function for the heating step, let it cool to 110°F, stir in the starter and run the Yogurt function for 6–10 hours. The point of this recipe is that you don’t need one: a pot and a blanket do the exact same job.
Can I use lactose-free milk?
Yes. It sets perfectly, though it usually tastes a bit sweeter, because the lactose comes already broken down into simpler sugars. Your starter will need to be lactose-free too.
What about plant-based milk?
Not with this recipe. Oat, almond and soy drinks don’t have the milk proteins that set with acid, so they need thickeners and specific cultures. That’s a different recipe.
How long does it need to ferment?
Between 6 and 10 hours. The longer it goes, the tangier and firmer it gets. If you like it mild, pull it as soon as you see it has set; if you like more tang, take it closer to 10 hours. Past 12 it starts weeping a lot of whey.
How do I know it has set?
Tilt the pot carefully. If the yogurt moves as one mass, like a custard, it’s ready. If it sloshes like liquid, it needs more time.
How long does it keep in the fridge?
A week or a bit more, well covered. It’s normal for some whey to pool on top over the days: stir it back in or pour it off.
Can I make it directly in individual jars?
Yes. Divide the seeded milk into glass jars, cover them and put them together in the warm spot. It comes out the same, and you get it portioned. Just note that if you want to strain it into Greek yogurt later, you’ll have to combine it all again.
Do I need to sterilize the jars?
You don’t need to sterilize them, but they should be clean and dry. Same for the pot and the spoon. There’s no reason to make your bacteria compete with whatever’s in a dirty jar.
