These apple “clouds” look like marshmallows, but they’re made with just 2 ingredients: apples and gelatin. The result is a light, airy texture that’s firm enough to slice—almost like bread.

Ingredients

  • 900 g apples (any variety)
  • 225 ml water
  • 45 g unflavored powdered gelatin
  • 80 ml cold water (to bloom the gelatin)

👉 For a softer, mousse-like texture, you can use half the gelatin. It will still hold its shape but feel lighter and more delicate.

How to Make Apple Marshmallows (Step-by-Step)

  1. Cook the apples with the water for 15–20 minutes until very soft.
  2. Blend until you get a smooth puree.
  3. Bloom the gelatin with 80 ml cold water for a few minutes.
  4. Add the gelatin to the hot puree and mix until fully dissolved.
  5. Whisk the mixture for 15–20 minutes until it becomes pale, thick, and fluffy.
  6. Pour into a lined mold.
  7. Refrigerate for at least 3 hours.
  8. Cut into cubes and enjoy.

Tips

  • If using a hand mixer, stop every 5 minutes to avoid overheating.
  • You can also use gelatin sheets—just soak them and add them to the hot puree.
  • Use sweet apples for a milder flavor.
  • Always add the gelatin while the puree is hot so it dissolves properly.

🍓 Strawberry Marshmallow Clouds

1️⃣ Make the strawberry puree: cook 300 g strawberries over medium-low heat for 5–10 minutes until soft. Blend until smooth and strain if desired.
👉 Optional: add 1–2 tsp sugar (at the start) or honey (after cooking).

2️⃣ Make the apple puree: cook 300 g apples + 80 g water for 10 min covered, then 5–10 min uncovered to thicken. Blend smooth.

3️⃣ Bloom gelatin: mix 10 g gelatin with 50 g cold water. Let sit 5 min.

4️⃣ Heat the puree, remove from heat, add gelatin, and stir until dissolved.

5️⃣ Whisk for ~15 minutes until fluffy and lighter in color.

6️⃣ Transfer to mold, chill 3+ hours, cut into cubes.

🥭 Mango Marshmallow Clouds

1️⃣ Cook 410 g apples + 65 g water.
2️⃣ Blend with 350 g mango until smooth.
3️⃣ Bloom 15–20 g gelatin in 90 g water.
4️⃣ Heat puree, add gelatin, mix well.
5️⃣ Whisk 15–20 minutes until fluffy.
6️⃣ Chill 3+ hours and cut.

🌺 Dragon Fruit (Pitaya) Marshmallow Clouds

1️⃣ Cook 450 g apples + 100 g water.
2️⃣ Blend with 280 g red dragon fruit.
3️⃣ Bloom 15–20 g gelatin in 90 g water.
4️⃣ Heat puree, add gelatin, mix.
5️⃣ Whisk until airy.
6️⃣ Chill and cut.

🫐 Blueberry Marshmallow Clouds

1️⃣ Cook 350 g blueberries (no water) until soft.
2️⃣ Cook 350 g apples + 90 g water.
3️⃣ Blend both.
4️⃣ Bloom 13–20 g gelatin in ~75 g water.
5️⃣ Heat puree, add gelatin.
6️⃣ Whisk until fluffy.
7️⃣ Chill 3 hours and cut.

🌱 Vegan Version (Agar Agar)

A vegan take on our viral apple clouds. The texture is slightly different (between flan and marshmallow), but still delicious.

1️⃣ Cook 900 g apples with 225 ml water and blend.
2️⃣ Optional: add up to 40 g sugar.
3️⃣ Optional: add raspberries for color and flavor.
4️⃣ Add 7 g agar agar, bring to a gentle boil, cook 2 minutes.
5️⃣ Whisk briefly to add some air.
6️⃣ Pour into mold, cool, then refrigerate 3+ hours.
7️⃣ Cut and enjoy.

💚 This version uses agar agar instead of gelatin, making it fully plant-based.
